Mediterranean Spinach & Quinoa Salad
3 C. cooked quinoa
3 C. spinach, chopped
½ C. Kalamata olives, chopped
1½ C. cherry tomatoes, diced
½ C. cucumber, chopped
½ C. orange bell pepper, chopped
½ C. green onion
4 ounces Feta cheese
½ C. walnuts
3 Tbsp. lemon juice
3 Tbsp. balsamic vinegar
1 Tbsp. extra virgin olive oil
Pepper to taste
1 ½ cloves garlic, minced
3 Tbsp. flax seed (optional)
1. Prepare quinoa according to package directions. Allow to cool completely.
2. While quinoa is cooking, chop vegetables as above.
3. Whisk together lemon juice, balsamic vinegar, extra virgin olive oil, pepper and garlic.
4. Mix all ingredients together and drizzle with vinaigrette. Enjoy!
