Fall, football, and back to school
My favorite time of year is almost here! I know, it’s early September, but I just can’t help myself! Fall is my absolute favorite of all the seasons because it just feels so warm and cozy, you know? There’s nothing better than a crisp fall breeze carrying the iconic smell of falling leaves. With the arrival of back to school, Husker football (Go Big Red!), and everything pumpkin, sometimes the fall brings its challenges to maintaining diet and exercise.
Back to school can be a difficult time for meal planning. Schedules get busier, kids need to be driven all over town, and the days get shorter. I like to rely on my slow cooker for those busy nights that don’t allow much time to prep and cook. Many Crock Pot recipes on social media use cream soups, cream cheese, and not a vegetable to be found! Husker games are always worthy of a celebration, but often I find myself surrounded by tempting tailgate foods. Believe it or not, you can find a balance between delicious and healthy at a Husker gathering. Veggie trays and shrimp cocktail are solid choices, but what about all the creamy dips, pizza, and chicken wings? Even little bites can add up to a lot of calories! If you’re going to a party, make sure to bring a healthy dish in case nothing else is. How about some spicy edamame or lean meatballs in tomato sauce? Check out these healthy snack ideas.
Alas, the pumpkin. Whether you love everything pumpkin or can’t stand it, it’s everywhere after Labor Day. I myself happen to like pumpkin, but not everything pumpkin. Loaded with vitamin A, fiber, potassium and flavor, I think pumpkin has its place in fall foods. Unfortunately, the food industry has taken our love for the Pumpkin Spice Latte and pummeled us with junk foods that we feel inclined to buy just because we’re in that fall mood! Don’t fall victim to that trap. Here are some pumpkin recipes that won’t leave you feeling guilty. Even though many of these are lighter alternatives, remember that “healthy treats” are still treats!
