1lb lean ground beef, chicken or turkey
½ - 1 white onion, diced
1 32 oz can tomato juice
1 can black beans
1 can petite diced tomatoes
1 can Rotel tomatoes & green chilies
3 cloves garlic, minced
1 Tbsp cumin
1 Tbsp tomato paste
1 Tbsp turmeric
1 tsp cayenne pepper (optional)
- In medium sauté pan, brown the ground beef with the diced onion.
- While beef is browning, add remaining ingredients to a medium or large slow cooker.
- Cook on high until warmed through.
- Serve with shredded cheese and diced avocado.
You can add chili powder in place of the cayenne pepper, or add more cayenne if you like it spicier. If you like a thicker chili, use less tomato juice. If you have high blood pressure, choose low sodium varieties of all canned items. Chili can be portioned out into individual servings and frozen for an easy lunch.
